Recipe Thursday: Bordeaux Blanc and Goat Cheese

It’s no secret that Sauvignon Blanc is a natural pairing for goat cheese. Simply put, the acidity in the wine matches the acidity in the cheese. With our wine of the week being Jean Médeville’s Bordeaux Blanc, a beautiful blend of Sauvignon Blanc, Semillon, and Muscadelle, we turn to a tried and true recipe that puts goat cheese front and center: Herbed Goat Cheese Stuffed Chicken Breasts from MyGourmetConnection.

Taking a bite of the goat cheese-filled crispy chicken, followed by a sip of Bordeaux Blanc, the palate is taken on a joyous adventure of harmonious flavors. The bright acidity of the wine cuts through the richness of the dish, cleansing the palate for another scrumptious bite. Meanwhile, the herb-laced cheese complements the herbaceous quality of the wine.

Wine of the Week - Jean Médeville Bordeaux Blanc

This week's featured wine has recently gained some popularity. Before WWII, white Bordeaux was considered equal to their red counterparts, prized for their beauty and complexity. After the war was over, due to the increased popularity of red Bordeaux in the United States along with other countries, many of the vines that were once dedicated to white grapes, were replaced with red. However, there were still many producers in the region who were dedicated to producing quality white Bordeaux. Jean Médeville et Fils is one such producer. Their Bordeaux Blanc is made up of  50%  Sauvignon Blanc, 40% Semillon, and 10% Muscadelle. It's fresh and well balanced. Lemons and pears harmonize with a slightly herbal finish. While it can be a versatile paring with food, this Bordeaux Blanc would be exquisite with poached white fish with capers and cream, roasted chicken, or herbed goat cheese. Just remember to serve only slightly chilled; 30 mins out of the fridge should do!
