Recipe Thursday: The Perfect Match for Aioli


The best food and wine pairings achieve one of two things: 1) the flavors complement and match each other in harmony or 2) the flavors provide a contrast that neutralize the palate and prepare one for the next bite. Strolling through Southern France in the warmer months, one everyday pairing that exemplifies the latter is aioli and rosé. The creamy, garlicky aioli and crisp, bright rosé elicit a wonderful contrast on the palate, begging for another bite. Aioli can be found as a condiment alongside pommes frites, cruditées and sandwiches, to name a few.
