#Repost @jackwells_wine with @get_repost ・・・ If you don’t know, now you know. Very limited release for this vintage. Herdade do Rocim from southern Portugal in the region of Alentejano. The owner and winemaker, Catarina Vieira, believes in organic viticulture, low-intervention winemaking, and expressive native varieties like Antão Vaz, which makes-up the bulk of this wine. For this white wine, she uses large Amphora, traditional for Southern Portugal. The inside of the amphora is coated with beeswax to discourage evaporation and control the wines exposure to oxygen. After the wine has fermented, it is “capped” with estate olive oil to reduce oxygen influence throughout its elevage. Not as much was made in 2018 as in previous vintages.
